E-ink can have better refresh rate than the LCD of a Mac Portable. And would also be readable.
Would be interesting to see how the ROM deals with changes in display geometry (the Portable wasn’t 512x284) - how hard would it be to make a 1024x768 portrait Mac or some other versions that never existed.
I was imagining you'd still plug it into an external display. I guess you could fairly argue that defeats the purpose of a battery, though...
Although, it might be cool with e-ink, low refresh rate notwithstanding.

Mini vMac lets you change the emulated resolution: https://www.gryphel.com/c/minivmac/options.html#option_xres. Works very well in my experience.
